 The winemaker at Shallon Winery is Paul van der Veldt. As with many winemakers, Paul started out as an amateur some 35 years ago, and has been a commercial winemaker for the last 26 years. He specializes in dessert wines, such as chocolate, chocolate-orange, cranberry/whey, and lemon meringue pie wine.
Other unique fruit and berry wines include: Wild Evergreen Blackberry, Blueberry, Wild Plum, Spiced Apple, Wild Black Raspberry, and Wild Hawaiian Mango.
